Sivi Pinot (Pinot Grigio), Ipša 2020 (750 ml)

Mali, ali fenomenalan proizvođač vina iz Istre (proizvode i jedinstvena maslinova ulja) imanje je poznato po dužoj maceraciji, prirodnom stilu proizvodnje vina… i izdvajanju odvažnih ukusa iz grožđa. To se može posebno odnositi na njihov Sivi Pinot (Pinot Grigio). Kako je kora sivog pinota nešto tamnija od ostalih bijelih sorti, Ipsine metode daju ovom vinu prekrasnu, ekstravagantnu nijansu boje ćilibara na ivici cigle. Buke mu je istovremeno intenzivan i fin, isprepleten notama sušene jabuke, kajsije i smokve, vanile i cimeta. Bogato i suvo vino, odlično se sljubljuje sa suhomesnatim jelima, jelima od bijelog mesa i bijele ribe, kao i sa plodovima mora.

A tiny but phenomenal wine producer from Istria – they also make exceptional olive oils – the estate is known for its longer maceration, natural wine-making style … and the extraction of bold flavours from their grapes.  That may be especially true with respect to their Sivi Pinot (Pinot Grigio).  As the skins of Pinot Grigio are somewhat darker than other white cultivars, Ipsa’s methods give this wine its beautiful, extravagant amber-bordering-on-brick-coloured hue. Its bouquet is intensive and fine at the same time, entangled with notes of dried apple, apricot and fig, vanilla and cinnamon. Both an opulent and dry wine, it is splendidly paired with cured meats, white meat and white fish dishes as well as seafood.
