Tequila

Guillermo Sauza i njegov sin Billy prave Tequila Fortaleza na isti način kako se tekila pravila prije 150 godina, a ukus joj je kakav je tekila imala prije ubrzavanja procesa u ime efikasnosti, prinosa i obima.

Koristeći ciglenu peć umjesto autoklave, srca (ili pinije) agave Blue Weber se sporo kuvaju danima umjesto satima.  Koristeći veliki vulkanski kamen umjesto industrijskog sjekača, kuvana agava se gniječi u sporom procesu koji ne uništava vlakna, osiguravajući time da se samo najčistiji sok ekstrahuje za destilaciju.  Koristeći tankove od drveta umjesto nerđajućeg čelika i male bakarne posude umjesto industrijskih kazana, Tequila Fortaleza iziskuje vrijeme i proizvodi samo male serije tekile koja je sada proglašena najboljom na svijetu.

Pošto je nemoguće da se ostvari obim ako se slijede ovi stari postupci, manje od pola tuceta još uvijek pravi tekilu na ovaj način, a  Fortaleza je jedina dostupna ovdje u Crnoj Gori.  Ako ste navikli na tržišne brendove kao što su Cuervo ili Patron, Fortaleza će biti otkrovenje. 

Guillermo Sauza and his son Billy make Tequila Fortaleza the same way that tequila was made 150 years ago, and it tastes the way tequila tasted before all of the processes were sped up in the name of efficiency, yields and volume.

Using a brick oven instead of an autoclave, the hearts (or pine) of the Blue Weber agave are slow cooked over days instead of hours.  Using a large volcanic stone instead of an industrial shredder, the cooked agave is crushed in a slow process that doesn’t tear the fibers, thereby ensuring that only the purest juice is extracted for distillation.  Using wooden tanks instead of stainless steel, and small copper pots instead of industrial stills, Tequila Fortaleza takes its time and produces only small batches of Tequila that are now widely acclaimed the world’s best.

As it is impossible to make volume when you follow these old processes, less than half a dozen producers still make Tequila this way, and Fortaleza is the only one available here in Montenegro.  If you’re used to the mass market brands like Cuervo or Patron, Fortaleza will be a revelation.
