Porodica Vacheron je bez sumnje najistaknutija vinarska porodica u Sancerreu. Njihov Sauvignon Blanc je uglavnom zasađen na zemljištima tipa silex, koja se sastoje od glinaste i krečnjačke podloge prekrivene kremenom. Ovakav tip tla vinima daje izraženu mineralnost i slanost, kao i karakterističnu dimljenu notu. Bijela vina iz njihovih cru vinograda odležavaju 12 mjeseci u velikim, neutralnim francuskim hrastovim buradima. Sva vina iz vinarije Vacheron danas su sertifikovana kao biodinamička.

Vino potiče iz vinograda na padinama oko grada Sancerre, sa mješavinom tla od krečnjaka i kremena (silex). Oko 20% kupaže čini vino iz selekcije pojedinačnih parcela, što doprinosi većoj kompleksnosti (uz blagi uticaj drveta, jer se vina sa tih parcela odležavaju u velikim drvenim bačvama). Grožđe se bere ručno. Fermentacija se odvija pomoću autohtonih kvasaca, u kombinaciji cementnih i inox tankova; zatim se vino odležava u tanku i ne filtrira se. Završno vino nudi arome kore grejpfruta i “baruta” (nota kremena), dok na ukusu dominiraju limun, limeta, morska so i hrskave kruške. Idealno uparivanje: salate, kozji sir, ostrige i ostali svježi školjkaši.

 

The Vacherons are without question Sancerre’s leading winemaking family. Their Sauvignon Blanc is largely planted on silex soils, which is a clay and limestone base, topped with flint. This type of soil gives the wines a particular minerality and saltiness, as well as a trademark smoky quality. The white cru wines are all aged for 12 months in large, neutral French oak barrels. All Vacheron wines are now certified biodynamic.

Sourced from hillside vineyards around the town of Sancerre, with a mix of chalk and flint (silex) soils. About 20% of the blend is wine from a selection of single-vineyard plots, which gives more complexity (also some wood influence, as the domaine’s single-vineyard Sancerre Blanc wines are aged in larger wooden casks). The grapes are hand-harvested. Fermentation is with indigenous yeasts in a combination of cement and stainless steel tanks; it is then aged in tank and unfiltered. The finished wine offers aromas of grapefruit zest and gunflint, and flavours of lemons and limes, sea salt and crisp pears. Pair this with salads, goat cheese, oysters and other fresh shellfish.
