Iako je Pošip sorta grožđa autohtona za ostrvo Korčula, u vinogradima u blizini Šibenika razvija sasvim drugačiji karakter. Ovdje se loza uzgaja u ekstremnim uslovima, na oskudnom krečnjačkom tlu. Rezultat su vina s izraženijom mineralnošću u odnosu na klasični korčulanski Pošip.

Pored toga, grožđe za ovu kupažu prolazi kroz 21-dnevnu maceraciju kako bi se izvuklo više aroma, koncentracije i boje. Nakon toga, vino odležava u novim hrastovim buradima od 500 litara, na talogu, što mu daje dodatnu strukturu i nijanse brioša, vanile i kedrovine. Rezultat je vrlo kompleksno vino, idealno za gastronomiju, s notama suvog voća, aromatičnog bilja i slatkih začina.

Ipak, zadržana je ona prepoznatljiva mineralnost i svježina. Ovo je vino koje možete uživati odmah, ili ga sačuvati godinama da biste omogućili dalji razvoj ukusa. Odlično se slaže uz pečenu perad, bogate tjestenine poput karbonare, masnu ribu, pa čak i jagnjetinu.

 

Although Pošip is a grape variety native to the island of Korčula, in the vineyards near Šibenik they have a different character.  Here, the vines are grown in extreme conditions on a meager limestone terroir.  The result is excellent, offering wines with a more pronounced minerality compared to the classic Korčula Pošip.

On top of that, the grapes for this blend undergo a 21 day maceration to extract extra flavours, concentration and colour.  The wine is then aged in new oak barrels of 500 litres, on the lees, to give it additional structure as well as hints of brioche, vanilla and cedar.  The result is a very complex wine that is ideal for gastronomy, with notes of dried fruits, aromatic herbs and sweet spices.  And yet, it has retained that lovely minerality and freshness.  This is a wine you can drink now, or save for years to allow further evolution of flavour.  Pair it with roasted poultry, rich pastas such as a carbonara, oily fish and even lamb.
