Saints Hills je hrvatska butik vinarija u vlasništvu porodice Tolj, sa vinogradima i podrumima u dvije glavne vinske regije zemlje: na poluostrvu Pelješac i u Istri. Vinarija je najpoznatija po svom savremenom pristupu vinifikaciji, naglasku na autohtone hrvatske sorte i saradnji sa čuvenim francuskim enologom Mišelom Rolandom (Michel Rolland). Svi vinogradi nose imena po lokalnim svecima iz ključnih vinogradarskih područja u kojima se nalaze.

Pošip je specifična autohtona sorta iz južne Hrvatske, vrlo aromatična i ne izvlači korist od ‘začinjavanja’ što se prečesto dešava s drugim primjerima (što je tužno). Umjesto toga se 6 mjeseci fermentiše i sazrijeva u velikim betonskim tankovima kako bi sačuvalo svoju svježinu i omogućilo mu se da razbije svoje sopstvene prirodne arome.  Naime,  u nosu prvo dominiraju arome svježe zrele kajsije i mangoa. Sekundarne arome u nosu su limuna i limete (čak i limunove kore), meda i sušenih smokava. Na nepcima je kompleksno i prekriveno aromama zrelog voća, bresaka, kajsije i malo ananasa. Završnica je vrlo dugotrajna, sa specifičnim gorko – slatkim zaostalim ukusom.

Saints Hills is a Croatian boutique winey owned by the Tolj family, with vineyards and wineries in the country's two principal wine regions:  the Pelješac peninsula and Istria. The winery is best known for its modern approach to winemaking, its emphasis on indigenous Croatian varietals and its collaboration with renowned French oenologist Michel Rolland.  The vineyard names are all inspired by local saints in the key wine-growing regions where they have vineyards.

Pošip is a specific indigenous variety to southern Croatia, very aromatic and does not profit from ‘spicing up’ as happens too often with other examples (sadly). Instead, this is fermented and matured in big concrete tanks for 6 months to preserve its freshness, and allow it to develop its own natural aromas.  To wit, the first nose is dominated by aromas of fresh ripe apricot and mango. Secondary aromas on the nose are lemon and lime (even lemon zest), honey, and dried figs. The palate is complex and layered with aromas of ripe fruit, peaches, apricot, and some pineapple. The finish is very long, with a specific bitter-sweet aftertaste.
