Proizvodi se pretežno od mlađih čokota iz vinograda imanja, kao i od vina koje ne ispunjava stroge kriterijume za ulazak u glavni cuvée (što zavisi od svake pojedinačne berbe). Najbolje je kada se pije nakon četiri do pet godina odležavanja (dakle – sada), a nastaviće da se poboljšava još najmanje 15 godina.

Berba 2019. bila je izuzetna u Bordeauxu, a Pauillac de Latour iz te godine se ubraja među najbolje dosad. Kupaža je sastavljena od 56% Cabernet Sauvignona, 39% Merlota i 5% Petit Verdota. Arome crne ribizle i zrelih šljiva izlaze iz čaše, obogaćene notama začina i biljnom svježinom koja podsjeća na mentol. Vino srednjeg do punog tijela, izuzetno elegantno i zaokruženo, sa hrskavim voćem i notama ljubičice koje ispunjavaju nepce. Meki tanini vode ka dugoj i zadovoljavajućoj završnici.

In addition to the classified grand vin, the estate also produces "Le Pauillac."  This generous, fruit-forward wine is an excellent introduction to Château Latour.  It is made primarily from younger vines in Latour's vineyard, and from wines that do not meet the strict selection criteria for the top tier (which is specific to each vintage).  It is best enjoyed after four to five years of ageing (i.e. now) and will continue to improve for at least another 15 years.  

2019 was a strong vintage in Bordeaux and the Pauillac de Latour is as good as any in recent years. It is a blend of 56% Cabernet Sauvignon, 39% Merlot and 5% Petit Verdot.  Aromas of cassis and ripe plums soar out of the glass, complemented by notes of spice and a herbal, almost menthol, lift. Medium- to full-bodied, this wine is so supple and elegant, bursting with crunchy fruit and violets that coat the palate. The soft tannins lead to a long and satisfying finish.
