Sotol je tradicionalno piće sa sjevera Meksika, destilovano od divlje biljke dasylirion (poznate i kao desertna kašika), koje se često poredi sa mezkalom zbog zanatske proizvodnje i zemljanog, složenog ukusa. Za razliku od destilata na bazi agave, sotol se pravi od potpuno druge biljne vrste, što mu daje jedinstven karakter koji odražava surove pustinjske predele u kojima raste.

La Higuera Wheeleri Sotol, napravljen od sorte dasylirion wheeleri, prenosi tu posebnost svojom blijedo slamastom bojom i mirisom divljeg bilja, vetivera, svježe pokošene trave i suptilnih cvjetnih nota, složenih sa mineralnom slanoćom i dodirom dima meskita. Na nepcu je svjež i čist, otkrivajući zelenu, agavi sličnu slatkoću uz koricu citrusa, eukaliptus i blagi slani ton. Nota bijelog bibera i anisa vodi ka dugom, biljnom završetku, gdje se zadržava suva mineralnost. Sotol is a traditional spirit from Northern Mexico, distilled from the wild Dasylirion plant (also known as desert spoon), and often compared to mezcal for its artisanal production and earthy, complex flavour. Unlike agave-based spirits, sotol is made from a completely different plant species, giving it a distinctive character that reflects the rugged desert landscapes where it grows.

La Higuera Wheeleri Sotol, crafted from the Dasylirion wheeleri variety, captures that uniqueness with a pale straw colour and a fragrant nose of wild herbs, vetiver, fresh-cut grass, and subtle floral notes, layered with mineral salinity and a touch of mesquite smoke. The palate is crisp and clean, revealing green, agave-like sweetness alongside citrus zest, eucalyptus, and a gentle briny edge. A hint of white pepper and anise carries into the long, herbal finish, where dry minerality lingers.
