Hatozaki 12 Year Old Umeshu Cask je najzrelija i najsofisticiranija od ove četiri etikete. Nakon 12 godina sazrijevanja u američkom hrastu, whisky završava odležavanje u buradima u kojima je prethodno bio Akashi-Tai Umeshu. Otvara se aromama svježe kruške, kajsije i žitarica, uz sve veću dubinu i kompleksnost kako se razvija u čaši.

Na nepcu je dubok i lijepo teksturiran, sa mednim notama i nježnom slatkoćom koju donose Umeshu burad, ali bez potiskivanja karaktera zrelog whiskyja. Završetak je dug i postojan, sa znatno većom dubinom od mlađih etiketa. Ozbiljan whisky za polagano uživanje, najbolje bez dodataka ili sa ledom, ali i odličan izbor za posebnu bocu ili poklon.

Hatozaki 12 Year Old Umeshu Cask is the most mature and sophisticated expression of the four. Aged for 12 years in American oak before being finished in casks that previously held Akashi-Tai Umeshu, it opens with aromas of fresh pear, apricot and cereal, developing greater richness and complexity as it opens in the glass.

The palate is deep and beautifully textured, with honeyed notes and gentle sweetness from the Umeshu casks complementing the mature whisky rather than dominating it. The finish is long and persistent, with considerably greater depth than the younger expressions. A serious sipping whisky best enjoyed neat or over ice, and an excellent choice for a special bottle or gift.
