Ovo imanje iz 17. vijeka – jedno od osamnaest u Provansi sa statusom Cru Classé – vodeći je čuvar rijetke i posebne sorte grožđa: Tibouren. Riječ je o drevnoj mediteranskoj sorti za koju se vjeruje da ju je posebno volio i Julije Cezar, a od nje se proizvode osvježavajuća, dimna i slana rosé vina, kao i zemljana, voćna i elegantna crvena vina. Ova specijalizacija, u kombinaciji s jedinstvenim režimom odležavanja u velikim, veoma starim hrastovim bačvama, učinila je Clos Cibonne pravim kultnim imenom današnjice. Ova rijetka i teško dostupna vina dolaze iz organskih vinograda, izvanredno su proizvedena i flaširana pod bezvremenskim etiketama koje se nijesu mijenjale gotovo cijeli vijek. Alokacije su veoma ograničene – obezbijedite svoje na vrijeme!
Ovo crveno vino – Cuvée Prestige "Olivier" – jedinstveno je među vinima ovog imanja jer nije napravljeno od većinskog udjela Tibourina. U ovoj kupaži nalazi se svega 10% Tibourina, uz 20% Grenachea i 70% Syraha. Kao i njegova „rođaka“, Cuvée "Caroline", i ovo vino odležava u finozrnim hrastovim bačvama zapremine 300 litara, ali u ovom slučaju najmanje jednu godinu.
Riječ je o zrelom vinu dobre strukture i finih, svilenkastih tanina. Intenzivne purpurne boje, na nosu je moćno, s aromama vrlo zrelog crvenog bobičastog voća i suve šljive. Već sada pruža veliko uživanje, ali – kao i većina crvenih vina – lijepo će se razvijati u boci u narednih 5 do 10 godina. Naš savjet: dekantirajte ga 30 do 60 minuta prije konzumacije.
This 17th century estate - one of eighteen in Provence with Cru Classé status - is the pre-eminent custodian of a rare and special grape varietal: Tibouren. An ancient Mediterranean variety reputedly favoured by Julius Caesar, Tibouren makes refreshing, smoky, sapid rosé wines, as well as earthy, fruit-forward, fine reds. This specialization, coupled with the estates unique aging regimen in large, very old oak barrels, has elevated Clos Cibonne to iconic status today. These unique and hard-to-find wines are from organic vineyards, have been beautifully made, and are bottled with timeless labels that have remained unchanged for nearly a century. This red wine - Cuvée Prestige "Olivier" - is unique among the estate's wines in that it is not made from a majority of Tibourin. The blend here is actually only 10% Tibourin with 20% Grenache and 70% Syrah. Like its cousin, the Cuvée "Caroline", this is aged in 300-litre fine-grained oak casks, though in this case for at least a year. It's a well-developed wine with good structure and fine, silky tannin. A strong purple colour, the nose is powerful and offers very ripe red-berry and prune aromas. It is certainly enjoyable now but - like most red wines - will evolve in bottle over the next 5 to 10 years. Our advice: decant it for 30 - 60 minutes before drinking it.
