Aglianico je jedna od istaknutih sorti juga Italije, a na imanju Bocca di Lupo u Apuliji pronalazi jedan od svojih najrafiniranijih i najelegantnijih izraza. (Iskreno, nikad nismo bili oduševljeni verzijama iz Kampanije, pa nas je ovo vino zaista prijatno iznenadilo kada smo ga prvi put probali. Toliko, da smo odmah uzeli čitavu količinu!)

Grožđe je ubrano u punoj zrelosti kako bi se dobilo veoma izražajno vino. Nakon toga je odležavalo dvanaest mjeseci u francuskim i mađarskim hrastovim buradima, a zatim još neko vrijeme u boci.

Rezultat je vino koje nudi divnu intenzivnost i dobru dozu kompleksnosti, sa notama trešanja, bobičastog voća (kupine i duda) i začina (biber i sladić). Toplo i bogato, sa odličnom strukturom i postojanošću, ali i lijepom kisjelinom koja mu daje svježinu i živost.  Sjajno se slaže sa jagnjetinom ispod sača, ali i sa većinom aromatičnih jela od crvenog i bijelog mesa, kao i sa srednje zrelim sirevima.

Aglianico is one of the stand-out grapes of Southern Italy, and here at the Bocca di Lupo estate in Puglia it finds one of its most refined and elegant expressions.  (Frankly, we never loved those versions from Campania, so it was a real surprise and delight to us when we first tasted this one.  So much so that we bought a whole bunch of it!)

The grapes were harvested at full ripeness in order to produce a very expressive wine. It was then aged in both French and Hungarian oak barrels for twelve months, followed by additional time in bottle.  The result is a wine that offers a lovely intensity and good degree of complexity, including notes of cherries, berry fruit (blackberries and mulberries), and spices (pepper and liquorice).  This is warm and rich with great structure and persistence, but with a nice acidic backbone that keeps it feeling fresh and vibrant as well.  This is a great wine for slow-roasted lamb (under the bell) but will pair well with most flavourful red and white meats, as well as medium-aged cheeses.
