Citadelle "No Mistake" Old Tom Gin (500 mL)
Old Tom je kategorija džina, koju odlikuje slatki profil. Tokom svojih čestih putovanja na Karibima, glavni destiler Citadelle džina je otkrio čudesan smeđi šećer, poput Demerare, vlažan i težak. Bilo je to nedostajući sastojak za stvaranje “Old Tom” džina.
Šećer se prepeče u bakarnim kotlovima u prvoj fazi karamelizacije, a potom lagano prorijeđuje i konačno pretvara u alkohol. Zatim odležava tri do četiri mjeseca u bačvama kako bi se dobio savršeni spoj svih elemenata, odnosno idealna integracija u 46% alkoholu.
Boja: zlatna
Nos: svjež i snažan, otkriva smreku, koricu narandže i kardamom, zatim postaje cvjetniji i biljniji, sa jasminom i cvjetnim grmom, kao i notama komorača, kima i kafe.
Usta: puna i elegantna, sa slatko-kiselim profilom očuvane limunove korice, genepijem, anisom i bademom, produžujući začinske note muskatnog oraščića, cimeta i cubeb bibera.
Završnica: zavodljive dužine, cvjetna, začinska i drvenasta, sa notama korijandera, ljubičice, anđelike, kima, rajskog zrna i sladića.
Old Tom is a category of gin, distinguished by its sweet profile. In the course of his frequent travels in the Caribbean, Citadelle’s master distiller discovered a marvelous brown sugar, like Demerara, moist and heavy. It was the missing ingredient to create an Old Tom.
The sugar is toasted in copper cauldrons for a first stage of caramelization, then lightly thinned and finally alcoholized. It is then aged for three to four months incasks in order to obtain a perfect blend of all the elements, an ideal integration at 46% alcohol.
Colour: gold
Nose: fresh and forceful, the attack reveals juniper, orange zest and cardamom, then it becomes more floral and vegetal, with jasmine and honeysuckle and notes of fennel and cumin, and almost sweet, with coffee.
Mouth: full and elegant, with a sweet and sour profile of preserved lemon zest, génépi, anise and almond, lengthening to spicy notes of nutmeg, cinnamon and cubeb pepper.
Finish: lovely length, floral, spicy and woody, with notes of coriander, violet, angelica, cumin, grains of paradise, and licorice.
