Organski uzgajane, stare loze na ovim parcelama daju izuzetno grožđe i izuzetno čist i koncentrisan sok. “Sauvage” opravdava svoje ime, odležava na finom talogu (u termoreguliranim inox posudama) 12 mjeseci, a potom se flašira bez filtracije ili hlađenja. A delicious and character-full Sancerre (100% Sauvignon Blanc) from top vineyards!  Here, the parcel selection is on 2 hectares of limestone terroirs located in the villages of Champtin and Bué-en-Sancerre.  Organically grown, the old vines in these plots produce exceptional grapes and an extremely pure and concentrated juice. “Sauvage” lives up to its name, aging on fine lees (thermo-regulated stainless steel vats) for 12 months, bottled without filtration or refrigeration. This wine is immediately identifiable on tasting thanks to its great freshness, liveliness, minerality, complexity and salinity on the finish.   This is a terrific pairing for white fish, especially meatier white fish like Turbot, as well as summer salads and goat's cheese.  This is a Sancerre built to last... you can enjoy it now or anytime until at least 2030.
