Le Paradou je projekat koji su kreirali Alexandre i Frédéric Chaudière čija porodica proizvodi neka od najcjenjenijih vina u regiji Vento u Château Pesquié. Njegov cilj je ponuditi svježa i seksi vina, stvorena za užitak i dijeljenje. Proizvodnja vina je jednostavna, nekomplikovana i izvedena je u nerđajućem čeliku ili betonu kako bi se očuvali aromatične čari i hrskavi voćni ukusi ovih vina. Ako ste ikada imali zadovoljstvo putovati u Provansu ljeti, sjedati vani na terasi i uživati u lokalnoj hrani i vinu, onda tačno znate šta Fred i Alex žele postići sa "Le Paradouom".

Cinsault je sorta koja se rijetko viđa samostalno, mnogo je češća u crvenim mješavinama ili kao ključno grožđe u izradi provansalskog rozea. I to je šteta jer, u pravim rukama, može biti veoma ukusno. Ovdje na nosu nudi svježe crveno bobičasto voće, pretežno maline i crvene ribizle. Nepce je suptilno, osvježavajuće i izbalansirano, pružajući arome crvenih bobica, cvjetne note (ruža, bijelo cvijeće) kao i lagane začinske note. Uparite ga sa jednostavnim i laganim jelima kao što su mesne plate, pizza, bijelo meso na žaru ili špageti bolonjeze. Poslužite svježe (17ºC) ili čak malo ohlađeno.

Le Paradou is a project created by Alexandre and Frédéric Chaudière whose family produce some of the most respected wines in the Ventoux region at Château Pesquié. Its goal is to offer fresh and sexy wines, made for pleasure and sharing.  The winemaking is simple, uncomplicated, and conducted in stainless steel or concrete to preserve these wines’ aromatic charms and crunchy fruit flavours. If you’ve ever had the pleasure to travel to Provence in summer, sit outside on a patio and enjoy the local food and wine, then you know exactly what Fred and Alex aim to achieve with Le Paradou.

Cinsault is a varietal rarely seen on its own, it’s much more common in red blends or as a key grape in the making of Provencal rosé.  And that’s a shame because, in the right hands, it can be very delicious.  Here it offers a nose of fresh red berries, predominantly raspberry and red currant.  The palate is supple, refreshing and balanced, delivering both red berry aromas, floral notes (roses, white flowers) as well as light spicy hints.  Pair this with simple and light dishes such as charcuterie, pizza, grilled white meats or spaghetti Bolognese.  Serve fresh (17ºC) or even slightly chilled.
