Castello della Sala je imanje porodice Antinori u Umbriji. Castello della Sala is the Umbrian estate of the Antinori family. One of its most interesting wines, Conte della Vipera, is a blend of Sauvignon Blanc and Semillon, with the Sauvignon typically harvested in late August and the Semillon a few weeks later in mid-September. The vineyards for these two varietals are located at an altitude between 250 and 350 meters above sea level on soils rich in marine fossils. The wine takes its name from the family which built the castle (Castello) in 1350, and the label shows the 13th century Saint John’s Chapel (the Cappella d San Giovanni) which is situated on the estate.
The wine itself is aromatic, but tremendously elegant. A straw yellow colour with bright green hues, the nose expresses fruity notes of pink grapefruits and lychee together with fresh delicate notes of sage and elderflower. The palate is refined, supple with excellent freshness. The finish is dominated by hints of lime and pineapple. This is a terrific pairing for fish appetizers, steamed shellfish, quiches, some baked white fish (including seabass) and fresh young cheeses.
