Porodica Vacheron je bez sumnje najistaknutija vinarska porodica u Sancerreu. Njihov Sauvignon Blanc je uglavnom zasađen na zemljištima tipa silex, koja se sastoje od glinaste i krečnjačke podloge prekrivene kremenom. Ovakav tip tla vinima daje izraženu mineralnost i slanost, kao i karakterističnu dimljenu notu. Bijela vina iz njihovih cru vinograda odležavaju 12 mjeseci u velikim, neutralnim francuskim hrastovim buradima. Sva vina iz vinarije Vacheron danas su sertifikovana kao biodinamička.
Chambrates je vinograd okrenut ka jugu, smješten na zaravni. Gornji sloj zemljišta je siromašan – mješavina gline i bijelog kamenja, sastavljenog od raspadnutog krečnjaka iz jurskog perioda. Korijenje vinove loze usmjerava se ka dubokim slojevima krečnjaka bogatim mineralima i hranljivim materijama, za koje vinari vjeruju da vinu daju “poseban karakter” u razvoju aroma i ukusa. Grožđe se bere ručno i fermentiše pomoću autohtonih kvasaca u velikim uspravnim drvenim fermentorima (kapaciteta 25–36 hl). Nakon pretakanja, vino odležava godinu dana u istim drvenim sudovima. Nefiltrirano. Vino nudi arome krema od limuna, bijelog cvijeća i svježeg đumbira. Na nepcu je široko, ali profinjeno, sa dobrom teksturom. Citrusne i začinske note dominiraju kompleksnim i mineralnim profilom ukusa. Završetak je izuzetno dug. Preporučuje se uz svježe ostrige i ostale školjke, kao i uz bijela mesa.

The Vacherons are without question Sancerre’s leading winemaking family. Their Sauvignon Blanc is largely planted on silex soils, which is a clay and limestone base, topped with flint. This type of soil gives the wines a particular minerality and saltiness, as well as a trademark smoky quality. The white cru wines are all aged for 12 months in large, neutral French oak barrels. All Vacheron wines are now certified biodynamic.
A south-facing vineyard, on a plateau. The top-soil of "Chambrates" is poor, a combination of clay and white stones, which are pieces of decomposed, shattered limestone (from the Jurassic geological era). Vine roots are trained to reach down to the chalky limestone sub-soils, a source of minerals and nutrients that the winemakers believe gives a "particular edge” to the development of the wine’s aromas and flavours. The grapes are hand-harvested and fermented on indigenous yeasts in large, upright wooden fermentation tanks (from 25-36HL). The wine is racked, then aged for one year in the same wooden tank. Unfiltered. The wine offers aromas of lemon curd, white flowers and fresh ginger. It is broad on the palate yet refined, with a good texture. Citrus and spices dominate the complex and mineral flavour profile. The finish is very long. Pair this with fresh oysters or other shellfish, and white meats.
