Ultraligero, Cherubino Valsangiacomo 2018
Cherubino Valsangiacomo is a family winery founded in 1831, nowadays run by the 5th generation. Most of the vioneyards are between 60 and 100 years old, which proved to be a huge asset when, some years ago, the region began to focus more on the quality of grapes rather than quantity. Much of their production is certified organic.
This is a new release from the winery with a limited productoin of about 6,300 bottles. It comes from two selected plots, one of 0.7 hectares of Pinot Noir in Fuenterrobles at 750m altitude, and the second of 0.5 hectares of Garnacha in Siete Aguas at 879m altitude, both in the province of Valencia. The wines are vinified separately with cold fermentation, only the Garnacha sees a bit of wood. Blended after two months, the wine is - as its name suggests - light and elegant and perfect for summer.
